6 tablespoon lemon juice
6 tablespoons minced ramps or shallots
4 tablespoons dried tarragon chopped
3 tablespoons dijon
1 ½ cups olive oil
salt and pepper to taste
Blend first 4 ingredients in Vitamix and slowly blend in olive oil on high speed. For this salad I used blanched asparagus and Lacinto kale, shredded dandelion leaves, arugula and pea shoots. and garnished with lavender and toasted pumpkin seeds.
